With a sand bath. Gerbils clean and groom themselves and you should certainly never bath them with water. Offer them a shallow dish filled with chinchilla sand (not dust) and they will roll themselves around in it and get their fur clean. It won't harm them to eat the grains, but you'll need to remove it if they start fouling it.
