Sometimes unrefined salt (from sea salt or rock salt) may contain impurities but is recommended to use refined iodized salt.

If you're doing a chemical reaction in which you need absolutely pure sodium chloride, you can't substitute sea salt--it has minerals which introduce an unwanted variable into the experiment. If you're cooking with it, substitute away.
