Yes. Some programs, such as Spybot Search & Destroy, provide a utility that securely deletes files from drives, including memory sticks, or dongles. Also, the utility provided by SysInternals, SDelete, is a good one. One low-tech but cumbersome way to make it difficult -- but not impossible -- to recover sensitive files is overwrite the files with new, larger, non-sensitive ones. Files deleted from memory cards can often be recovered given the new files were not over written on the old files. If you accidentally deleted pictures from you memory card make sure you don't use the card for further storage so your files don't get overwritten. There are many free software available "zero assumption digital image recovery" is my favorite. Scanning your card with it will give you a list of recoverable files and you can choose which files you want to recover. I have recovered photos and videos deleted 2years ago from my phone's memory card with this method.
No chance !... Once a file is deleted, the memory previously used by that file is marked as 'free' space. As you say, you've '...used it since the files were deleted...' - I can almost guarantee the deleted files will not be recoverable !
