They can actually measure how the ground near the volcano rises and falls as pressure builds and subsides inside the volcano. In a more dramatic fashion, volcanoes can severely deform when they explode. Find the slow motion video of Mt. St. Helens erupting and you will see what I mean. An entire side of the mountain collapses and explodes.
