In a mobile phone coming with a pre built symbian OS you cant change it but you can uograde the firmware from the manfacturers site for performance improvements. For Ex: Nokia N73 comes with Symbian OS 9.2 where as the latest Nokia 5800 touch comes with Symbian OS 9.5. The basic UI is almost same for the different versions but performance ll vary.
