Princess Peach is also Princess Toadstool. However, that was never her actual first name. In Japan, her name has always been Peach. For a reason nobody really knows, Nintendo of America changed her name to Princess Toadstool. In Super Mario 64 was the first use of using Peach for her name. Now her full name is Princess Peach Toadstool.
