If you have a jar of pimento cheese spread which contains (Cheese, mayonnaise & pimentos) then the shelf life is 8-10 days. If you have the sliced pimento cheese (loaf) then the shelf life is 4-5 days as sliced cheese tends to dry out..
I am trying to find where I can buy Mrs. Weaver's pimento spread in the area around Cleveland, OH. I first bought it in Olive Branch, MS and loved it, but have not been able to find it in Cleveland.
I bet you can freeze it. It's not like tomatoes or strawberries, that pretty much have to be cooked or blended straight from the freezer. As far as spoilage, I just opened a package that said best if used by Feb 2008, and it's July. It still smells like a fresh pack. I just ate a half sandwich of it, so we'll see! That may sound crazy, but I've always followed the smell test and pimento spread is made with cheese and vinegar, so I believe it's pickled in a way. ---------Are you insane ? Pimento cheese is NOT made with vinegar. Cheese, mayonnaise & pimentos (the basis .... some add other thing such as worcestershire, cayenne pepper, salt etc - but NOT vinegar) You should NOT FREEZE PIMENTO CHEESE, The oil sin the mayo & cheese separate which makes for an edible but unpleasant P.C. cheese & vinegar .....EWWW ! There are 2 way . one is to use less onion, I like white onion diced finely with a sharp knife not food processor. second way is try using chives or green onion.
Depends what you mean by cheese spread. If you are talking about cheese whiz or any form of processed cheeses, then NO. Cheese cake is made with cream cheese because it needs to be able to form into a solid "cake" like texture. Cheese spread cannot harden unless it dries out.
