Because the top is only part of the tree. The rest of the tree, like an iceburg, is out of sight under ground. The roots supply the top of the tree with water. The leaves in the top of the tree convert light and water into the energy the tree needs to survive. So the tree tries to live on after the top is cut off, and will if left on it's own to heal (regrow).

For YOUR safety the conifer should be cut down in sections. Individual limbs to get access to the trunk then 'top' the tree, cut off the top section. Afterwards you can work your way down.

You should not cut much off of the top of a Cedar hedge. You should only cut 1 to 2 inches off to be safe.
An easy way to tell if your avocado is ripe is by flicking the small brown stem off the top. If it comes off easily and the bit underneath is green, it's ripe. If it doesn't or is brown, it's not ripe.
