You cannot delete a player, but you can overwrite them.
Start playing as a new game and then when it's time to save your game, choose the player you want to overwrite and then type in the new name of the current player.

as such, no. but this is being considered by the game makers - Streetdog Well actually there is a way. But you will not only delete your profile, but the other two as well. It deletes all of the game's history. You simply turn off your DS while the game is saving. Then when you turn it on just tap the screen and it will be as though you just bout it!
