You most definitely CAN eat UK river trout and they are quite tasty and easily digestible, BUT you are encouraged to follow a catch-and-release philosophy. As stated by the Wild Trout Trust:
"Wild trout are a precious resource and filling the freezer with them is not sustainable! Wild trout that are caught and released carefully will live to breed and be caught again. Catch-and-release can make a huge difference to the quality of fishing on a wild fishery."
River trout that originate from fish farms and stocked to rivers tend to be much less tasty until they have survived several years in the rivers and built up flesh from consuming their natural food. If you've ever tried eating a river trout that has only been recently stocked after being raised on a fish farm, you were almost certainly very disappointed with the almost inedible taste.
