Water in a metal cup will freeze faster because metal conducts coldness and energy the most. trust me, I did a project with a metal, plastic, glass, and paper to see which cup would freeze the quickest. Hopefully this answer helped.

We freeze fresh squeezed orange juice all the time. I suspect grapefruit juice is the same.
if you want to to make juice ones you simply put juice in a cup that is as big as you want the popsicle and put a stick in and put it in the freezer.
