Some wine-makers use 'isinglass' to clarify their wines, that is, remove colloidal particles of yeast and must prior to bottling. Other wine-makers use other kinds of gelatins.

Isinglass is collagen/Gelatin which is gathered from fish stomachs.

It is also extensively used in beer-making.

There is no reason why you can't have red or white wine with anything you wish to eat. Wine snobbery is something to avoid. Drink whatever wine you want and ignore the so called wine connoisseurs. Personally, I prefer a crisp Australian white to any other.

The typical rule of thumb is red wine with red meat, white wine with white meat. If the fish is white, like tilapia, white wine may pair well. If it is a red fish like salmon, red wine may pair better. But these are by no means laws. Drink what you like with what you eat!
