Can you make dumplings out of bisquick pancake mix?

Any pancake mix is just baking ingredients like flour, baking powder, baking soda, shortening, etc., so the answer is a resounding YES! I typically use Bisquick with a little milk and seasonings to form a sticky batter that is dropped into a boiling stew. There are SO many variations with egg, butter and seasonings that you may have to try a few until you find what you want.

I start with a fryer in a stock pot with broth or water and bullion. I'll chop up celery, carrots and onions. Sometimes fresh garlic. Cook chicken covered until done and falling off the bone. I'll spoon out chicken and veggies, mix up dumplings, bring remaining broth back to boil, drop spoonfuls of dumplings in and cook as directed. Finally, spoon out dumplings and, if broth has not thickened up enough for you, take a little more Bisquick, dissolve it in a jar with a tiny bit of hot water, add to the broth and cook on high a little more till thickened. It is awesome! Chicken, veggies, dumplings and gravy all from one pot!

Yes, you absolutely can. One of my favorite recipes using a baking mix (I prefer Bisquik, but use any brand you prefer) is Southern Chicken Fricassee with Dumplings. *Season chicken breasts with salt, pepper, parsley and paprika, and then coat the pieces with Bisquik (reserve any left over Bisquik). Brown all pieces in a small amount of hot oil till golden brown, then remove from skillet (chicken will not be done!). Add enough of the left over Bisquik to the oil to make a roux for gravy; let cook until the roux is a golden brown. Add water or chicken stock to roux, stir well to prevent lumps. Add a can of Cream of Chicken soup, salt, pepper, parsely flakes and paprika to gravy, then add chicken pieces. Add more water if needed to ensure enough gravy, but not enough to cover chicken or biscuits. Bake at 375 degrees till chicken is almost done.

Following directions on box of Bisquick for buscuits, mix the dough. Drop dough by teaspoonfuls on top of gravy, but do not stir. Sprinkle tops of dumplings with small amount of parsley and paprika, then return to oven; bake till dumplings are done and tops are golden brown.

*Instead of using chicken breasts, you can use any pieces you like, or cut up a whole chicken to use.
