One of my favorite recipes using a baking mix (I prefer Bisquik, but use any brand you prefer) is Southern Chicken Fricassee with Dumplings. *Season chicken breasts with salt, pepper, parsley and paprika, and then coat the pieces with Bisquik (reserve any left over Bisquik). Brown all pieces in a small amount of hot oil till golden brown, then remove from skillet (chicken will not be done!). Add enough of the left over Bisquik to the oil to make a roux for gravy; let cook until the roux is a golden brown. Add water or chicken stock to roux, stir well to prevent lumps. Add a can of Cream of Chicken soup, salt, pepper, parsely flakes and paprika to gravy, then add chicken pieces. Add more water if needed to ensure enough gravy, but not enough to cover chicken or biscuits. Bake at 375 degrees till chicken is almost done.
Following directions on box of Bisquick for buscuits, mix the dough. Drop dough by teaspoonfuls on top of gravy, but do not stir. Sprinkle tops of dumplings with small amount of parsley and paprika, then return to oven; bake till dumplings are done and tops are golden brown.
*Instead of using chicken breasts, you can use any pieces you like, or cut up a whole chicken to use.
