This also applies to fresh kiwi fruit. If you have fresh, not canned, pineapple or kiwi fruit that you want to set in jelly you'll need to cook the fruit in some way first. The simplest way is to cut the fruit into cubes, the size you want for your jelly, and put it in a container with some water, cover, and microwave until the fruit is steaming. Uncover and cool slightly; refrigerate until cold: now you're ready to make jelly.
