I'm sure you could, but it wouldn't turn out right. If you prefer not to use eggs, they have pre-made pancake mix at the grocery store so that you only have to add water.
You can use milled flax seed instead of eggs. The conversion on the box I use says one tablespoon of flax plus 3 tablespoons of water equals one egg. I usually mix the flax substitute first and let it sit for a few minutes to let the mixture congeal. The effect that it has in food is equivalent to what you would get had you just used egg whites. I made a batch of bisquick pancakes with the egg substitute last night and they came out nice, thick and fluffy. I use flax in baking all of the time and my friends never notice the difference. Sidenote: flax is also a great source of omega 3.
We use our duck eggs in pancakes all the time. It actually seems to make them a lot lighter and fluffier

To make good breakfast foods kid friendly, add some sweetness to them. For pancakes try chocolate chips in them or lots of syrup. For eggs, make original, plain, eggs with nothing in them. Add salt and pepper. For sausage, again, make it plain. Cook it in lots of butter. This adds a greasy, yummy taste.
