Many people will tell you that for best results, you should use a glass or ceramic bowl, especially when preparing recipes with sourdough. However you certainly can use a metal bowl if you want and with most recipes it will likely work just fine. Automatic bread makers all have metal bowls, so it can't be that bad.

When I do cook with metal I prefer cast iron or stainless steel. I do not like using aluminum because I find there is a higher chance of the food having a metallic taste, or being discoloured.
