The simple, but incomplete, answer is to gather all the information you have so far, and call your local police. If your local department has the resources they will take it from there. Unfortunately, most police agencies do not have the resources to devote to non-violent property crimes. When that is the case, you have to take a reasonable amount of responsibility for protecting your own business. Which means, you have to build the case yourself.

To prosecute, your information has to identify the person responsible and show that they took the missing money or property, without authorization, for personal gain or use. Once you have all this information is an organized package (in essence, a completed investigation) it becomes a workable matter for the police. Make your crime report with all the new information attached, and it will be prosecuted.

So how do you build the case?

Employee theft cases frequently take a little work to solve. If it is an ongoing problem, hidden cameras are a great way to catch your thief. You may find that actually installing and maintaining a hidden camera is more work than you thought, but it can be worth the effort. If you know what your thief likes to steal, you can put some "bait" right under your camera.

Sometimes the method used creates its own evidence once you know where to look. For example, I just wrapped up a fairly unsophisticated case in which an office manager stole checks made out to her company, wrote her name on the "pay to" line after the name of her company, and deposited them in her personal account. All those checks were enough by themselves to prosecute.

Often you have a single event (such as a missing deposit), no forensic evidence, and no expectation of a recurring pattern. These are tough - you basically have to look to the employees themselves to provide you with the answer, most effectively in the form of a confession. Getting a legal confession is usually readily done in employee theft cases, however it is an art and a science with some pitfalls and it is not for amateurs.

It may be worth the investment to consult a professional. There are professional investigators who specialize in these types of cases. Success rate is very high, and you will get the job accomplished without any mistakes that could create civil liability.
