If it has hubs, they can be replaced. I'm assuming that, by 'straight axle truck', you're referring to one which uses a solid front axle, rather than independent front suspension? Those use hubs, as well.
You need to be more specific about the configuration. Is a single axle straight truck, a tandem axle straight truck, a tandem axle straight truck with additional lift axles, a tractor trailer...?

In order to replace the rear wheel bearing you will need to find the axle shaft bearings and remove them. They are located at the center of the housing where the ring and pinion gears and at the axle end near the wheel mounting position.
Remove the tire and wheel. Remove the axle end. Remove the axle seal. Remove the wheel bearing. Reverse the process to install the new wheel bearing.
