Red Dead Redemption is set in Mexico and America. Camels live in Africa, India and parts of Asia therefore there is no camels in Red Dead Redemption.
You unlock the mounts as you progress through the game and you can get new outfits by killing gangs. You usually only get a piece of the total outfit and you need to collect the entire outfit in order to wear it. there is no way to change your character that i know of.

One of the missions should teach you. You lasso the horse then get on the horse and keep balanced until you can ride the horse around.
Are you talking about the mounts that secure the cab? and by "how does it ride", I would assume you mean the quality of the ride. I would think it would be pretty bad at times.
Every class can ride mounts, there are only 6 class specific mounts. Charger and Warhorse for Paladins. Felsteed and Dreadsteed for Warlocks. Acherus Deathcharger and Winged Steed of the Ebon Blade for Death Knights.
