Before putting some mp3 albums on an iPod Touch or iPhone, run them through the free program called "Taghycardia". It will check tags for missing info, get cover art and embed it into the tracks. Then the images will show on the device automatically while songs are playing.
When the song starts playing because you don't have another one playing already so you should play songs from a play list.

You have two choices.Go to the music app, scroll down to the song that you are listening to (if it doesn't automatically show up) and hit the pause button.Hit the Home button twice in quick succession, and a dialog box should pop up.
