Some high schools offer it, some do not.
Most high schools in the US offer Spanish and/or French; other languages are less common, so unless you're in a fairly large city you're not likely to have other options. My own high school (in a town of about 5,000) didn't offer it, but a friend of mine who went to the largest high school in a city of 80,000 did have German as an option.

German sticks nouns together. Haupt and schule combine to tell the answer. Haupt means high or secondary. Schule means school. Put them together and you have second school. This is the level above the starting level in German school system. It corresponds roughly to middle or junior high school. So Hauptschule means junior high school.
