You can't take it off by choice. Ezio takes it off at points when he is speaking with specific people (usually trusted individuals or women).

Actually you can when you do sequence 6 memory 4 decline the mission and the hood is off.... If you want it back on go to dna load sequence 6 mem 4 go to her Sofia's house and instead of declining the mission accept and hurray it's back on.
Edit: Though it's true that Ezio's hood can be removed through the above process, I would do so with caution - some people have reported glitching when his hood is removed, especially while swimming.
Nope. Armor is always on, you can choose which armor you wear though.

Your hood is only off when you are in the homestead area. It returns as soon as you leave that area

If im wrong. take a look ^.^ In assassins creed brotherhood he is in his early to late 40s. Another person: Ezio would need to be 25 since that was how old Desmond and Altair were in the first game, and Desmond does not look much older in the 2nd and 3rd games as he does in the first one
