I've always made them from scratch, but if I were going to try using a devils food cake mix, I would substitute the amount of water called for in the directions with an equal amount of buttermilk with one teaspoon of vinegar and two ounces of red food coloring.

Just add the food coloring and vinegar in the measuring cup first, then add the buttermilk until it is the same amount of water called for in the directions.

Sometimes the red food-coloring in red velvet cake can have a bitter taste. (It takes a lot of red color to make the cake such a rich red). Some companies, such as Wilton, make no-taste reds that don't affect the taste of the cake.
