You can, but it may result in the crust not being quite as flaky as it would be if you use an all purpose flour. Just be sure to not add any salt to it since self-rising flour already has salt in it.

It is not a good idea to try to use self "rising" flour to make pie dough. Pie dough (the crust) is an unleavened dough, meaning it uses no leavening agents such as baking powder, baking soda, yeast, etc. Self rising flour is packaged with the leavening agent premixed into the contents and therefore instead of a flaky flat crust you will end up with a biscuit type crust. Your basic pie crust ingredients are flour (plain), butter (a fat), salt (small amount), water or milk, on occasion a small amount of sugar is used as well. The dough is kneaded and then rolled out.
