You can't. All single phase motors can only rotate in the direction in which they were manufactured. That is either clockwise or counter-clockwise. Only three phase motors can be reversed by changing the connections. Most ceiling fans have two sets of wiring in their motors so that a direction switch determines which way the fan rotates.

When a room is hot it is better to have the ceiling fan turned counter clockwise. This forces the air to blow down. In the winter the fan should turn clockwise to keep the warm air higher.
In a hot room, you want heat to be pulled up to the ceiling, then distributed as cooler air around the room. You would set your ceiling fan to rotate clockwise to do this.

Good question. It depends on your point of reference. If you Look UP at it while it is installed on the ceiling, then use the nob or pulley that controls the fan to use as the 12 marker on the clock. If it goes to the right its clockwise and to the left it is counter-clockwise

A fan motor has two parts namely rotor and stator. In a table fan blades are attached to rotor and its movement appears to be clockwise. In a ceiling fan, blades are attached to stator so blades appears to be moving anti clockwise.
It depends on the pitch (angle) of the blades. On most, it's counter-clockwise. Counterclockwise in the summer for cooling and clockwise in the winter for dispersing warm air.
