You need a reasonable Dry White Wine
An Alsatian Gewurztraminer white wine (I prefer a dry one) or a Neuchatel blanc, are two wines which I have found work very well with a Swiss cheese fondue.
I would pair cheddar cheese with a nice fruity sauvignon blanc. The semi sweet fruit flavors help cut the sharp flavor of the cheddar cheese. I would recommend a nice bottle of the Seresin Sauvignon blanc!
As Brie is a soft creamy cheese, it is usually best matched with a wooded chardonnay which has undergone malolactic fermentation. Well aged semillons can also work well. Full bodied reds should generally be kept well away from Brie.

Ingredients1 lb Cheese and spinach-filledpasta (tortellini, -ravioli or agnolotti) 4 oz Walnuts, toasted1 ts Crushed garlic1/4 c Romano or parmesan cheese1 c Heavy cream1/2 c Sun-dried tomatoes, slicedthin Cook pasta in boiling water until al dente. Drain and set aside. Meanwhile, prepare sauce. Grind walnuts, garlic and cheese in food processor until mixture is well blended. Heat cream in saucepan. Add to walnut mixture, combine, and cook for 1 1/2 minutes. Add pasta and toss with sauce. Serve.Garnish pasta with tomatoes.
This will keep well for a while if it is stored in an airtight container. It can last up to 5 days. Longer if you freeze it.
