From your own knowledge, books, or online research, then find the calorie count for each ingredient and apply it to the amount that yu have in the recipe. Finally, add all fo the calories together and you have the calorie count for the whole recipe.

1 gram of protein = 4 calories
So if you know the fat, carb and protein content of the food, you can use the above to calculate the calorie content.
