Saturn's rings are made up of loads of rocks, particles, dust and ice lumps that are all in independent orbits around the planet. They could be broken up, and have been, by some of the moons that are also in orbit around the planet. The gravitational effects of these moons can make the gaps between the rings.
To be totally broken up, a very large object would have to come into play to upset the orbits of the ring material. Such an event would be very rare.
