There is "vinegar" and then there is "acetic acid." They're not quite the same thing, even though the same chemical is at the heart of both products. "Vinegar" is made out of fruit juice, like apple cider and wine. You can get a 20-percent acetic acid concentration out of it if you're willing to wait 60 hours, but most producers go 24 hours and get 15-percent concentration. You're gonna mix it down to 5 percent concentration with water anyway. This isn't especially harmful unless you splash it in your eyes. They make a super-concentrated double-distilled vinegar in Germany that's sold at 40-percent concentration and that can be harmful, but it's not real common in the US.
