One gene provides the information for on specific protein for one purpose. However, there can be many different variants of this gene due to permutations in the genetic code. This can means more than one type of gene being present in the general population for just one protein, which can change the resulting product (protein). The scientific term for this is allele.
An Allele
Alleles are alternate versions of genes that code for certain phenotypes, or traits. The traits of an individual are a result of the interaction between their genotype (alleles) and the environment.
Epistasis occurs when one gene masks the expression of another gene, while dominance is when one allele of a gene is expressed over another allele. In epistasis, the interaction between genes affects the phenotype, while in dominance, one allele is dominant and determines the phenotype.

An allele is essentially the same as a gene so there is no difference in quantity between the two in any cell.
