Everyone, as well as anyone, are considered as singular collective nouns. Sometimes, in English, it's best to just follow the rules and not try to understand why. It can get very confusing and frustrating. I see the logic in thinking that it's everyone. Also, as in "everybody does what they have to." The fact that it is referring to every singular person is, I guess, why it works that way.
