Edward does not have fangs but he still has venom, that is on his teeth. It's the stuff that turns you into a vampire, so that's why he's so carefull, and he doesn't want her to accidentally become a vampire by him. He is always careful of kissing Bella because he knows he can't ever lose control with her. He is always concentrating on keeping her alive, and can never lose that control.

Well, James bit Bella, so his venom was in her, and if they didn't get it out, Bella would become a vampire. Someone had to get the venom out.
