Since Jack The Ripper was never caught there is no way to discern his eye color. Short of a positive ID, we can only guess what the Ripper looked like.

The only thing we can safely assume about Jack The Ripper is that he is dead. His crimes began in the year 1888 so it would be impossible for him to be alive. Other than that everything else is speculation and guessing.

Like many other Ripper suspects, Thompson was associated with Jack The Ripper only by the flimiest of circumstances. Thompson had trained as a medical doctor and he lived just south of Whitechapel. Other than that I could find no other reason for him to be a suspect.
The only Joe Birdsey I could find lived in the 1600's. That would make him about 200 years too early to be a Ripper suspect.
The Ripper's only purpose was to please himself. His crimes were all about him and his power over his victim's lives and deaths. To the rest of the world, his crimes made no sense at all.
Considering nobody knows who he was, the only thing we can say for sure that he did like was murdering prostitutes.
The files kept by the Metropolitan Police show that the investigation opened in 1888 encompassed eleven murders from 3rd April 1888 to 13th February 1891 and were known as the Whitechapel Murders. Amongst this eleven murders investigated by the police, five are almost universally agreed upon as having been the work of the Ripper. However there were other murders and there is no absolute proof that the Ripper killed only the 5 or even this 5. Numerous authors proffer numerous possibilities of identity for the Ripper and the actual number of murders. So the whole Ripper scenario is just shrouded in mystery - everyone can have their pet theory that cannot be proven or disproven. In fact apart from the fact that there were murders, nothing is known for sure - perhaps 'Jack the Ripper' was a woman?
There is no way to tell. The Ripper was never caught and has never been positively identified. There were quotes from people that claimed to be JTR but it would only be speculation as to how authentic they are.
