It is a common behaviour of serial killers to take something from the victim or crime scene. These items are called 'trophies' and they help the killer relive the kill, extending the thrill until the urge to kill is overwhelming and the killer hunts again. Jack The Ripper was no exception. With victim Annie Chapman her killer removed several rings that she was known to always wear. The Ripper was also in the habit of taken internal organs from his victims. In fact, in the now famous 'Lusk letter' the killer sent one half of a human kidney with the letter. Preserved in alcohol, when examined it was found to be a human kidney in the last stages of Brights disease. Katherine Eddows had been treated for Brights in the months before her murder.

It is possible that other items were taken by the Ripper. These women were for the most part homeless. Moving around constantly, aquiring and trading small items such as needles and thread, soap, buttons, ect. If the killer took other things they may not have been noticed after their deaths.

If you mean by a mark like a 'Ted Bundy' bite mark or stones found inside some of the victims of The Green River Killer Gary Ridgeway, not really. Several of the Ripper's victims were wearing neckerchiefs, but not all of them.

His trademark was the condition that he left the bodies in. The mutilation was horrendous. Missing organs, organs arranged outside the bodies in certain ways let the police know 'this is a Ripper victim'. And as his crimes escalated, the faces of the women were slashed and cut so that even their closest family or friends could not recogize them.

It was a look that appealed to him for whatever reasons. If you look at the pictures of Annie Chapman she resembled many of his other victims. So why he picked her was probably a combination of opportunity and she looked like what he wanted. There were many women in the same sorry state that the Rippers victims were in. Homeless, poor, alcoholic, and for the most part, living on the fringes of society. They made easy prey. And when one turned up dead it seemed no family members were outraged on their behalf. But he didn't take them. He took the ones that fit what he wanted.
