Well no horse 'pulled' the Pony Express as it was a company and not a stage coach type set up. The horses were ridden at a steady gallop, and any horse that could cover distance at a regular pace were used. So more than likely Morgans were used at some point.
They race horses on dirt so the ground is nice snd soft and safe for the horse or pony. They like it nice and soft because if the ground is hard and slippery, the horse or pony could slip, or pull a muscle.
