The Best possible wood for carving is Evergreen.Many woodcarvers as do I use BASSWOOD, Its a soft tight grained wood which makes for its popularity. Its very easy to carve, Its true you can use most any wood. NOTE: (the harder the wood the harder to carve) And in some cases (With a knife almost impossible) With the onset of power tools such as grinders, diamond , cutz-all , and carbide bits the harder woods are used more. Australia has very very strict customs laws about such objects, if its only wood you should be ok, but declare it and they will probably want to check it to see its not containing any nasties
I have 4 signed James Haddon Santas that are all real wood, if that's any help. If you are asking if HE is real, I'd assume so. If you are asking if his work is made of wood, rather than resin replicas of wooden carvings, the ones I have certainly are. And they are wonderful.
chisel is when you would use a chisel, (a tool), to carve any shape or whatever out. carving is when you you use any carving tool to get a shape.
