The most likely would seem to mean three pairs and some have suggested the seventh was for a thanksgiving sacrifice once Noah and his family left the ark (or possibly for meat or both). Thus, this seventh animal was the 'odd one out' and would have been 'unpaired.' Obviously, as some think, if it was seven pairs, then all these would have been in pairs with none left out. Thus, these animals, which also frequently overlap with the domesticated animals which were to be useful to man post flood, were needed in greater numbers and so more were taken, however you interpret it. In line with the above there would have been many animals which did not then exist until they diversified post-flood under the selection pressures of the radically altered environment. These animals were only figuratively on the ark in terms of the gene pool of their ancestors.

After Noah got off god magically recreated all the plant, fungal, and all microscopic organisms but couldn't recreate the visible animals and humans. God makes all of the offspring of the animals and Noah genetically diverse enough to prevent imbreeding. God puts fossils of Ancient life in the Earth to test the faith of future believers. After the earth is fully repopulated god remembers he could have just used magic to kill all of the humans instantly instead of his ridiculous flood plan.
