Mount Shasta last erupted in 1786. It is very likely to erupt again. After an eruption, many plants and animals will die. However some plants may be back in as little as two years but by ten years after the eruption, there will be many plants and animals back.
All would be fine and no one would die at all :)

Because if you destroy the ecosystem you are disrupting the natural cycle, and some animals may die out, and the animals that need to eat the first animals that are dying out also die because there are no more of those animals. Then the cycle goes on and if the animals die out, there won't be nutrients and the plants will die, and when the plants die humans will die because there won't be any food source and the planet won't be able to contain any life. This is only my opinion and this is based on if we destroyed them and have not attempted to fix it.
There aren't any plants and animals on the moon because the moon doesn't have any oxygen for them to breathe. Plus the plants need sunlight or they will die.
