Knights Lived In A Variety of places, including Castle Towers. So, yes they did.
Since only the Nobility could be a knight all of them did.
-----
Most castles were too small to have any number of horses kept in them. Knights, who were cavalry, required horses, and so most castles had few or none. Some of the larger castles could have a number of knights, but the number of knights varied and could never be very great. This was not merely a question of a stable, but of grazing land required for horses if the castle was being defended in a siege.
The people who lived in a castle sometimes included members of the nobility, but the nobility often preferred to live in manor houses because castles were essentially forts, and not many of them were very comfortable. The people who lived in castles were mostly the garrisons of the castle, who were foot soldiers, and the support staff. Often large castles only had a dozen or so people in them, and often castles were entirely deserted.
Knights usually lived on manorial estates, and in fact the development of the manorial estate was partly based on the economic need the knights had for income to cover the cost of armor and a place to keep their horses.
There was wide variation in the number of people who could live in a castle, because there was a lot of variation in the size. Some castles were rather small, and consisted of only a single turret; such a castle might only have a couple guards living in it. Other castles were very large and might have a hundred people regularly living there, with provision for many more when times got rough.
Some people who worked in a castle did not live there, but in a nearby manor or village. The number of people who worked in a castle might or might not be about the same as the number who lived there.
Anywhere from several hundred to several thousand depending on the size of the castle.
