according to my point of view i may say the pharonic egypt because in the ancient times the egyptians have a group of solders called the scribes who were train for war.

Ancient Rome was a vibrant civilization. They did much the same for a living as we do today, but without the modern conveniences. They did clerical work. service work such as a butcher or a baker, they did artistic and decorative works, if not an artist themselves they manufactured the materials for the artist. They also farmed, worked in the oil industry (olive oil, that is), worked in the liqueur industry, (various wines and beer) and were into manufacturing pottery and oil lamps. Just about any job we have today with the exception of strictly high tech positions, had an ancient counterpart.
I beleive that the polynesian were the most venturous sailors, because they set off in the ocean to reach what became called, Hawaii, even though they could not see it, and had no firm idea where to sail to.
Work their fields, fish, tend livestock, artisans, labours, soldiers, sailors.
because of the moisture of the oil if you throw oil in a bottle of water you would realize that it is calm the same thing goes for the sea and boat

Scurvy? No, more like hunger, and vitamin D deficiency (from lack of exposure to the sun?). Ancient sailors struggled to get sufficient vitamin C, which is what led to scurvy.
