Yes they did - I have translated many original medieval wills from Latin to English; they were mostly written by wealthy merchants, craftsmen and tradesmen since the disposal of their property after death was not clearly defined in medieval law. Poor people did not write wills because they had little property to pass on, while the aristocracy were governed by the Law of Primogenture (where the eldest son inherits everything).
In one will, a joiner/carpenter made certain that his best tools went to his eldest son, who would carry on his craft and take on his business. His older, worn-out tools went to other sons for them to sell.
A merchant who dealt in crossbows left parts of his stock to aristocratic clients, but his shop and business went to his son.
