If the scene requires him to like guys than he likes guys if he needs to be interested in girls than he is.

You can't. It's not an unnaired episode, it's an unmade episode. There is no such episode that ever existed. Seth said they had that idea for the episode but it never made it through the production process.

I wouldn't say Stewie is a satirical character - he is loosely based on Rex Harrison from My Fair Lady, but I don't think there has ever been a gay English baby genius! Perhaps his character has a hint of irony because he is the opposite to how you would imagine a baby boy.
