There are lots of differences, but the main one is that Oak mostly are deciduous and Pines are evergreens.
Some trees, like Oak, have a main or "Tap" root. If that is the only root available to support the tree it cannot be cut. Part of the time consuming training of a bonsai includes encouragement of new roots branching off of the trunk base prior to potting it up as a bonsai. When enough new roots are present the tap root can be cut so the tree will fit into a shallow pot.

Firs are evergreens, have needles, produce cones (like pinecones) for reproduction, and are soft woods. Oak trees shed their leaves in winter, have leaves to shed, produce nuts (acorns) for reproduction and are hard woods. The difference between hard woods and soft woods is in the trunk and where the dividing line between the heartwood and sapwood exists. Oak is much harder to drive a nail into or cut than a fir.
