Probably a bad thermostat.

This requires a special socket to fit the sending unit. Using pliers may damage the unit and cause an oil leak. The unit is located in back of the engine , on top, just to the drivers side of the distributor.
The 325B is a Mossberg 385k. any good shotgun gunsmith can repair it.
Most SBC have a port next to the distributor.
i asked this question the tempture gage shows it is over heating but the engine is cold to touch
the sensor is in the gas tank. you probably need to replace the sensor.
Chevy sells a tank additive that removes corrosion from the sending unit that uses resitance to gage how much fuel in tank. Check your local dealer for the additive, the gage usually shows an erratic reading due to corrosion, bad fuel quality at the pumps.
That doesn't sound right. Maybe try a different gage.
12 gage
