Dead animals do have blood until it decomposes or bleeds completely out. It's just not pumping and/or sustaining life anymore. If the animal is not killed due to an accident in which blood vessels are burst or cut open, the blood is still contained inside the body until it is decomposed.
Additionally, there are animals with no blood at all, like sponges.

The one word answer is 'No' All those animals which have Iron as an oxygen binding compound in blood have red colored blood. Any other metal (Zn etc) give rise to other coloured bloods.
