Yes. Some are 4 speeds some are 6 speeds but most are 5 speeds. I've had about 9 bikes in my life, met a lot of people with a lot of different bikes and never saw a racer with an automatic.
no they have both manual and auto
It's a manual transmission, it doesn't need fluid at all.
most manual transmissions are all hydrolic. so there migh not be a dipstick.
yes, you can make almost any vehicle with an automatic transmission manual, but it is usually not worth the expense, you have to get your hands on the manual transmission then you have to modify the floor for the shifter and put in a clutch & linkage all in all not usually worth it

According to Haynes Repair Manual #36071, 1993-2005 Ford Ranger pickups, all models: Manual transmission fluid type is MERCON automatic transmission fluid.

it takes mercon v atf transmission fluid in all ford mustangs
It all depends on the type of transmission the truck has, if it is manual than manual transmission fluid is used where if it is automatic, automatic transmission fluid is used Not always, my 91 302 with a 5 speed manual uses auto fluid, a lot of manuals do.
All 900s 1993-1998 are listed as 10W/30 for the manual gearbox
