Stars DO shine in the daytime; in fact, they shine all the time. But the Earth's atmosphere scatters some of the sunlight, making the sky appear to be blue. That scattered sunlight is still so bright that you cannot see the dim pinpoints of starlight by comparison. And without the Sun so bright and close by, all life on Earth would quickly die out, because the atmosphere would freeze solid and there would no longer be any air.

Why should it disappear? It's big, it's visible, and it reflects sunlight; OF COURSE it will be visible. The only reason we can't generally see stars during the day is because the sunlight is scattered all around the horizon, and the scattered sunlight "drowns out" the light of the stars and planets. But you can often see the Moon in the daytime, and if you know exactly where to look, you can often see the planet Venus during the day, too.
Simple answer: When the sun is out, the sky is brighter than the stars and all of the stars' light is drowned out. Detailed answer: Stars glow during the day, but we can't see them because of the glare of sunlight. When the sun is up, the blue color in sunlight gets scattered all over the atmosphere, turning the sky the familiar bright blue color. This blue light is much brighter than the faint light coming from the stars, so it prevents us from seeing them. If you were standing on the Moon, for instance, where there is no atmosphere, you would see the stars both day and night. Dave Kornreich wrote the detailed bit!
