No, answers that you edited before joining The Initiates Program do not count towards your total for the editing answers mission.
Similarly, any answers that you edited whilst on a previous mission do not count towards your total either.
It is only the answers you edit from the start date of your mission that count towards the mission.
You can check how many answers you have edited by clicking on "My contributions" on the blue menu and filtering to "Answers (edited)".

You can begin your first mission once you receive the details of the mission on your message board from Zapallar. You will receive this mission once you have confirmed that you wish to be in the program and you have been accepted. This message will contain your mission start date. Anything that you do for the mission before that date will not count towards the mission.
