Depends on species. As a general rule the large part are sweet eaters, but there are a few exceptions that would go for the cheese. Some ants prefer proteins when given a choice 7 the dual action baits contain both a protein & sweet bait to target more species. generally peanut butter is used for the protein part.

Ants like more or less the same things in cheese as those you like: cheese contains mainly proteins and fats that are tasty and build your body and give you energy, but it also contains salts and vitamins. Not only that, but certain bacteria and fungi break down the molecules of proteins and fats in the cheese, and make new molecules from them. Those new molecules give cheese the tastes and smells that the ants like and that humans like too.
