They only do if they have to. but, to tell you the truth, we dont taste that good. so they will only eat humans if we disrupt their enviornment. =]
They are highly capable of doing so, sure. It's not uncommon to occasionally hear of a human getting mauled and even chewed on/eaten by a bear.
